The Tastiest Lentil Soup You’ve Ever Had


I bet you that this is the tastiest lentil soup you’ve ever had.

Maybe you’re like me and you’ve never had lentil soup before. (In that case, I win the bet pretty handily.)

Maybe you have had it before.

Prepare your mouth for awesomeness.

And to prove once more why I will win this bet, this recipe is from If that doesn’t prove to you that I am right, you’re hopeless.

Crock Pot Lentil Sweet Potato Soup

serves 6-8


4 large carrots, chopped

4 stalks celery, chopped

1 onion, diced

2 large sweet potatoes, peeled and cubed

1.5 cups chopped green beans

2 cups green lentils

1 tsp minced fresh rosemary

1 bay leaf

1 tsp dried oregano

4 cloves garlic, minced

1 15-oz can diced tomatoes

64 oz vegetable broth

2 tsp salt (or to taste)

1/2 tsp pepper


Combine all ingredients in a slow cooker. Turn heat on low and cook for 10 hours, adding a little more broth at the end if soup seems too thick.

What’s a running blog without food?


What blog, especially RUNNING blog, is complete without recipes?

None, I tell you, none!

I FULLY admit that I am not a vey good cook, but I want to learn! So I will be posting healthy (and also probably not-so-healthy) recipes here. Perhaps I will have tried them, perhaps not. Like I said, cooking isn’t my forte.

After all, Poptarts are probably my favorite food (and not even the semi-healthy fruity ones).

I also might try to throw in some cool nutrition information in here. Beware of nerdy biochemistry and metabolism posts.
